Quick & Easy Brunch Recipes

I’ll be honest, I’ve never been a fan of cooking. Even the idea of it used to stress me out, especially if I was attempting to make something for someone else, so I stopped trying altogether. Back in the fall of 2019, I moved to England for 3 months and was able to survive on chicken, pierogies, and a lot of pasta but my confidence in the kitchen was nonexistent. So at the beginning of the pandemic, I decided that enough was enough, and with all the time I was going to spend at home I was going to attempt to teach myself how to make a few dishes that I would feel comfortable making for someone else. I thought brunch was the best meal to start with because it could be integrated into both breakfast and lunch and for convenience sake, I’ve been waking up closer to lunchtime and breakfast would’ve been done hours before. I’m still no expert and my knowledge is limited but I thought I would share my 2 quick and easy go-to brunches that I’ve been loving.
Pierogi Inspired Scrambled Eggs
Serving size: 1 person
Ingredients
2 eggs
1 teaspoon of butter
Dash of milk
1 slice of onion, preferably Vidalia or other sweet onion
1 slice of deli meat ham
A handful of shredded cheese
Salt to taste
These scrambled eggs came about by accident, although I would like to think I knew exactly what I was doing. Living in a Polish and Ukrainian (but very Canadian) household growing up, we had our fair share of pierogies and they became one of my favourite dishes. I would always sauté onions and ham in a frying pan and have them with my pierogies with sour cream so when I was living in England, I wanted to bring a little piece of home into my kitchen. One afternoon I started sauteing the onions and ham when I had realized that I ran out of pierogies so I had to improvise something quick! I threw some eggs into the mix and sprinkled on some shredded cheese and boom, my Pierogi Inspired Scrambled Eggs were born!

Directions
To begin, you want to slice your onion once and chop it into small pieces. Take one slice of your ham and cut it into squares. Add butter to a non-stick frying pan and once melted, add the onions. Wait a few minutes before adding the ham. Keep the heat low as you don’t want to chance burning the onions.
In a bowl, crack 2 eggs and whisk them. Add a dash of milk and mix it up but remember, the more milk you add the more liquid will be in the finished product.
Once the onions and ham have been sauteing for a few minutes, add the eggs to the mix and sprinkle a touch of salt all over. At this point you should probably pop your toast into the toaster. I suggest sourdough as it’s my new favourite bread!
On a low heat, gently mix the eggs until they appear to be nearly cooked. Sprinkle or grate your cheese of choice, my personal favourite is a mozzarella and cheddar mix, and continue mixing the eggs until they look cooked and the cheese is melted. If you’re feeling uneasy about if the eggs are fully cooked, remove them from the burner and cover your frying pan and let them sit for a minute. At this time you can butter your bread or make a coffee or tea!
Plate up your finished product, add some cherry tomatoes, and you’re good to go!
Super Basic Avocado Toast
Serving size: 1 person
Ingredients
1 avocado or 1/2 avocado, depending on preference
1/2 teaspoon lemon juice
Pinch of salt and pepper
Your choice of toastable bread
It was only until recently that I absolutely hated avocados. I thought the texture was weird and it had a very odd taste to it. While I’ve gotten over the texture, I’ve figured out that by adding a few simple ingredients, you can make your boring plain toast into a bright green colour! There are a bunch of vitamins and minerals in each one and it is perfectly Instagram worthy!

Directions
Carefully, and I mean carefully, cut your avocado in half and remove the pit. I had an accident where I was using a butcher knife when trying to remove the pit and since the avocado wasn’t ripe enough, the pit was much more difficult to remove. The knife slipped out of the pit and cut right into my fingernail, so please, be careful and don’t use big knives!
Depending on the amount of avocado you’re using, remove it into a bowl and mash it with a fork or if you find it easier, a potato masher. Add in your lemon juice, salt, and pepper and you’ve got some super simple avocado that you can put on toast!
However, while I enjoy avocado toast like this, I also enjoy adding eggs on top. Some of my favourites include a cheese and chive omelet, sunny side up eggs, poached eggs, or scrambled eggs on top. I also love to add a little Sriracha sauce and a pinch of pepper on top!

While the 2 brunch recipes are super simple and basic, I think it’s important to master those kinds of things before you dive into the deep end of the kitchen. I’ve thoroughly enjoyed playing around in the kitchen these last few months and am so excited to try out new recipes for different meals now that I have a bit more confidence in the kitchen!
